Can anyone suggest a quick to fix appetizer that would go with a taco salad type meal? There will already be salsa and chips there of course.

How about a Queso, I just use Velveeta, a can of Rotel Tomato/Chilis, can of olives, can of diced chilis and put it in either a crock pot or fondue pot to melt. It is delish and you can dip your chips into it, or get some Scoops. :)

You could do sort of a chile rellenos--cut open "big jim" type (large, mild) peppers and lay them in a greased dish, top with cheese and bake until melty & bubbly.

Or stuffed jalapenos--trim off the stem end and with a small knife pull out seeds & ribs, stuff with cream cheese or a cream cheese/cheddar blend, top with a 1/3 piece of bacon and secure bacon with a toothpick thru jalapeno. Make a snake out of aluminum foil to help them stand up and bake until bacon is rendered and everything is hot & cooked.

Something else that would be delicious would be slices of mango with lime juice squeezed over and a light dusting of any ground chile pepper. Chipotle would be nice. You could cube it and serve it on toothpicks. Super-simple and really, really tasty.
