Danielle Pallaske Pan-Grilled Pork Chops with Grilled Pineapple Salsa and Poblano-Cilantro Rice

Manly saw a lovely looking package of pork chops while he was at the grocery store and couldn't resist them. Kristi Rimkus Creamy Scrambled Eggs in a Toasted Bread Cup

Don't we all love recipes that are easy , but fun to make. This recipe from Sunset Magazine falls into that category.

Whole wheat bread is pressed into muffin tins, baked until toasty brown, and the filled with cream scrambled eggs.

Kristi Rimkus Smoky Mexican Chicken Burger

We grill anytime of the year at our house. I love mixing up different combinations of burgers. Beef, chicken, seafood. You name it, we grill it.

I love this Mexican burger with the cumin and lime. Avocado on the top didn't hurt either.

If you are interested in a seafood burger, we loved this salmon burger too.

Kristi Rimkus Lighten Up That Artichoke Dip

Kristi Rimkus Colorful and Creamy Broccoli Salad

You can get your kids to eat their broccoli with this colorful and creamy broccoli salad.

I love broccoli salads because you can add almost anything to them. I used colorful peppers in this version, but often times I'll add dried cranberries, raisins and a variety of nuts to make a sweeter salad.

Kristi Rimkus Light Buffalo Chicken Salad

I love foods with big flavor. Buffalo Chicken with Blue Cheese on the side is a favorite. Too bad it's loaded with bad for you fat, and tons of calories.

I decided to lighten up one of my favorite bar foods, and put it in a healthy, colorful salad. Lean chicken breasts sliced and marinated in hot sauce, colorful bell peppers and leafy greans are topped with a light blue cheese or Ranch dressing.

Kristi Rimkus Slow Cooker Steak Chili

What can you do with leftover steak? Make chili, of course!

I make chili out of almost anything that would go into the compost bin if it's not used up immediately. Vegetables, chicken, turkey, leftover beef. You name it, it can go in the slow cooker, and you have an easy meal at the end of the day. The added benefit is the house smells delicious when you walk in the door!

Kristi Rimkus Shrimp and Mushroom Wonton Soup

If you're a blogger and a foodie like me, it's likely you follow a lot of recipe blogs. That's how I found this recipe for Ro-Ri's Wonton Soup.

I couldn't resist the opportunity to make my own filled wontons, and I wasn't disappointed. This was really a lot of fun, and very easy to do.

Simple, light and delicious. Can't beat that!
