Manly saw a lovely looking package of pork chops while he was at the grocery store and couldn't resist them. Pork chops are probably my least
favorite part of the pig but I decided to make the best of it and made
them with this grilled pineapple salsa to counteract the boringness of
said pork chops. The salsa was phenomenal and really perked up this
dinner and gave me an excuse to make my all-time favorite Mexican ri

We grill anytime of the year at our house. I love mixing up different combinations of burgers. Beef, chicken, seafood. You name it, we grill it.
I love this Mexican burger with the cumin and lime. Avocado on the top didn't hurt either.
If you are interested in a seafood burger, we loved this
salmon burger too.
Happy cooking!

http://motherrimmy.comDon't you just love a really terrific appetizer? For many people, artichoke dip is tops on their list. Still, it's loaded with lots of fat and calories.
I took care of that by lightening up this recipe from
AllRecipes.com. Just a few simple changes, and I'm a happy camper.

You can get your kids to eat their broccoli with this colorful and creamy broccoli salad.
I love broccoli salads because you can add almost anything to them. I used colorful peppers in this version, but often times I'll add dried cranberries, raisins and a variety of nuts to make a sweeter salad.

I love foods with big flavor. Buffalo Chicken with Blue Cheese on the side is a favorite. Too bad it's loaded with bad for you fat, and tons of calories.
I decided to lighten up one of my favorite bar foods, and put it in a healthy, colorful salad. Lean chicken breasts sliced and marinated in hot sauce, colorful bell peppers and leafy greans are topped with a light blue cheese or Ranch dressing.
Enjoy!

What can you do with leftover steak? Make chili, of course!
I make chili out of almost anything that would go into the compost bin if it's not used up immediately. Vegetables, chicken, turkey, leftover beef. You name it, it can go in the slow cooker, and you have an easy meal at the end of the day. The added benefit is the house smells delicious when you walk in the door!

Occasionally, when I want to serve an expensive main course, I search for less expensive sides to even out the plate. Last week I chose onions, but in one of those odd synchronistic moments, three of us shopped for food. The result was a glut of onions. In fact, pounds of onions.

If you're a blogger and a foodie like me, it's likely you follow a lot of recipe blogs. That's how I found this recipe for Ro-Ri's Wonton Soup.
I couldn't resist the opportunity to make my own filled wontons, and I wasn't disappointed. This was really a lot of fun, and very easy to do.
Simple, light and delicious. Can't beat that!
