- Favorite Foods:
- Fish and Beef Grilling using a variety of marinadesand rubs, sides and toppings. Desserts (Yum Yum) Curries and Ginger seasoned dishes. Chinese once a week, Sushi once a month. Pizza (but good dough) once every 6 weeks and an off the grill Burger King, KFC and Big Mac every 6 months
- Who are your favorite chefs/cooks?
- Escoffier was who I trained with not literally but using his books. Cooking Fundementals is the key to kitchen success.... A great chef/cookbook will not just give you a recipe but motivate you to make a recipe come alive...think on those thoughts!
- About Me:
- European trained got into the kitchen by default...wanted to be in the front of the restaurant so the learning curve the past 25 years has been great. I am in the process of completing a book "Cooking with Clive" .. creating empty bottle moments. I take the lessons learnt through the restaurant,catering and cooking school I had and apply them to living...Eat Enjoy Eligighten.
